Gratitude

This week, I was reminded by the Thanksgiving holiday of all the things I have to be grateful for. I am grateful for my family and boyfriend, a warm bed, good food and water, my cat, freedom, and so many more things. I find that when I think about what I am happy to have in my life, I spend less time thinking about my problems. This week, I visited the garden and did a final harvest. I was also grateful to get these unexpected vegetables and spend time outside with my cat. This included two small white radishes and four green onions. I didn’t have any onions make large bulbs this year. I also took some more herbs: oregano, thyme, and rosemary. I got a few leaves of basil but it is definitely done for the year. I used the herbs in a spinach ricotta penne recipe. It was mediocre and I think it needed more garlic. I continued to use my pumpkins and made the pumpkin curry recipe from Swasthi’s recipes again. I wanted to make a pumpkin cheesecake from Sugar Spun Run but I misread the recipe. I got the wrong crust and ended up making the no bake cheesecake recipe from the package, shown below. This was pretty good but didn’t really taste like cheesecake at all. I have been having dry skin and especially lips since moving to Oklahoma. I had tried Carmex and Chapstick but these didn’t help. Recently, I tried a new brand called Mongo Kiss that really helps a lot. I feel grateful to have soft lips again and put a picture of the product below. My boyfriend also recommended that I try coconut oil as a lip balm. This treatment also works very well for me. I have made a bracelet for my mom for the coming holiday today. I will be continuing to work on gifts all month long.
